Adding to the current list of cocktails are six new creative inventions that will not cease to liberate your palate.

Big in Japan ($24)

Big in Japan $24 for Gourmet Adventures

Inspired by matcha green tea, Big in Japan brings together two whiskies (single malt and blended): Johnnie Walker Black Label and Ardbeg Ten, shaken in a mix of Akashi Tai Honjozo Genshu sake, matcha and sencha (simmered Japanese green tea) to create a refreshing and smooth citrusy concoction that starts off with sweet before developing sour notes of lemon, ending with a lingering smoky aftertaste.

Bloody Maria-San ($24)

At first sip, robust notes of kimchi will hit you hard before gradually growing on you. Combining Don Julio tequila with fresh fruit (lemon) and greens (celery and cherry tomatoes), kimchi sauce is stirred in with a hit of white vinegar to enhance flavors of umami. Sip this with a dash of homemade celery salt on the rim—this rendition of Bloody Mary will have you screaming for more.

Espressamente Martini ($24)

Espressamente Martini $24 for Gourmet Adventures

Perfect as a post-work tipple to give you a boost of energy to start the night, Espressamente Martini is a smooth combination of paprika, vanilla, freshly brewed espresso marmalade and Luxardo espresso, and booze (Belvedere vodka)—bittersweet and strong, just the way we like it.

Galangal Style ($24)

Galangal Style $24 for Gourmet Adventures

Take a break from mojitos for this refreshingly exotic creation. Commonly used in Thai tom yum soup, galangal (blue ginger) is aromatic with delightfully sweet notes of spice, making this vodka-based libation of sencha tea and homemade ginger root beer (and a dab of jasmine syrup) different yet incredibly easy-drinking—perfect for our hot climate.

Mumbai Colada ($25)

Mumbai Colada $25 for Gourmet Adventures

Presented in an Indian tin cup commonly used by street hawkers in Mumbai, this cocktail was inspired by Indian cuisine. Spice-laden yet bittersweet, expect a complex mix of flavors and textures—we made out notes of roasted mustard and turmeric; its homemade kaya mix of bourbon, cardamon pods and vanilla giving it a bittersweet touch. Garnished with traditional Indian ‘mouth freshener’ (caramelized cumin seeds and fennel), this drink does an excellent job of balancing various flavors and textures with sophistication.

Scheherazade ($25)

Scheherazade $25 for Gourmet Adventures

Inspired by Moroccan culture and cuisine, Scheherazade (yes, we know, it’s practically unpronounceable), is a myriad of exotic flavors that will tingle tastebuds, with dates, cumin seeds and spiced candy that birth a unique concoction that evolves with each sip.

Suze Matters ($23)

Suze Matters $23 for Gourmet Adventures

One of our personal favorites, this tequila-based cocktail brings together Gentian flavors with a hint of sweetness from fresh pomegranate seeds and a dash of Suze—a bittersweet liqueur with aromas of Chinese ginseng and a sweet finish. Homemade cinnamon syrup and gula melaka is then added to the mixture to give it a bittersweet kick of spice. We just can’t get enough!

The One I Had Last Time ($22)

The One I Had Last Time $22 for Gourmet Adventures

Its moniker stemming from an all-time favorite at Catalunya Bar, The One I Had Last Time is bursting with botanical flavors from Mancino Rosso, old ginger, orgeat, honey syrup, orange juice and lemon. Topped up with fortified Spanish wine Pedro Jimenez and Johnnie Walker Black Label whiskey, this twist on the traditional Blood and Sand cocktail blossoms with sweet aromas of honey with a bittersweet finish.

Catalunya, The Fullerton Pavilion, 82 Collyer Quay, 6534-0886. Open daily noon-2am.
