Help Eliminate Poverty at Fleur de Sel’s “La Maison des Etoiles” Dinner on Sep 4

In a world where wining and dining as well become second nature; where water is served either sparkling or still (maître ds shun you like the plague if you respond “tap”) and $300 degustation meals have evolved into a societal norm, it is refreshing, heartwarming even, to see a restaurant choosing to give back to the community.

Each year, French restaurant Fleur de Sel personally handpicks a child-focused non-profit organization, and ties up with them to raise awareness and funds. Giving back to the community is the core of their belief, and children in need are close to their heart. Last year, Fleur de Sel raised $10,000 for Make-A-Wish Foundation Singapore, adopting two children in the process.

To celebrate its second anniversary, Fleur de Sel will be serving a seven-course wine-pairing degustation dinner ($270 nett) on September 4, hosted by international television personality and HFHSG ambassador Anita Kapoor. All food and wine costs will be fully borne by the restaurant, and the full amount of $270 will go towards Habitat for Humanity Singapore’s (HFHSG) StarBuilder’s program.

Habitat for Humanity Singapore is part of an international Christian nonprofit housing organisation working for people of all backgrounds regardless of their race, language or religion, that seeks to eliminate poverty worldwide by building simple, decent houses.

Part of the dinner will see a starter of Atlantic crab tartare brimming with thick, luscious shreds of crab meat sitting beneath fork mashed avocado, its creaminess juxtaposed against a scoop of balsamic sorbet that melts gently into puddle of cool refreshment.

Its pre-dinner course of Brittany dover sole is beautifully poached a la sous vide, its tender white meat just slightly shy of well done, so a bite ensues in crisp freshness and texture, a splash of lemon sabayon complementing the fish—a glorious example of perfection. We very much enjoyed it with the accompanying herb salad, further amplified by crunchy Charlotte potatoes, olives, and tomatoes, sundried so it comes into its own.

Dessert arrives in the form of a globe filled with layers of chocolate and praline, with a sticky string of fleur de sel caramel and 70% dark chocolate sauce, alongside a dollop of milk chocolate ice cream to satisfy. It is rich, yet delicate at the same time, a very comforting end to a most lovely meal.
